Mike's Wild Game Marinade

The Brittany Brigade in action!

Oma & Opa recently attended a wild game dinner.  There was some marinated meat being cooked on the grill and it was SO delicious that Oma was inquiring about the marinade ingredients.  A few days later, a recipe for the marinade arrived in the mail!  This marinade recipe is from Mike H.:

For 5 lbs of meat or less:

1. Cut game into about 1-inch chunks (we use duck, deer, geese and doves - any dark game will do).

2. Mix together:
(Note from Mike: We use four times the amount shown below but we do 25 lbs. of meat at a time)
  • 1 bottle of soy sauce
  • 1 bottle of Worcestershire sauce
  • 1 16-oz can of crushed pineapple (not slices or chunks)
  • 1/2 cup brown sugar
  • 1/4 cup cooking oil

3. Marinate Meat at least 12 hours in the refrigerator.
4. Drain well before you put it on skewers.
Note from Mike: You can also make those kabobs with veggies added to the meat such as mushrooms, onions and tomatoes. I marinate everything. Be sure and soak your sticks at least an hour or two in water before putting on the grill or they will burn up - or you can use metal skewers.

5. Cook the kabobs on a very hot grill, either gas or charcoal for about 3 minutes per side or until done to your taste.
6. Do Not Overcook the Meat ..... that's one of the secrets to the success of this recipe!!
